Pea and ham soup
Ingredients
1 tablesp oil
8oz bacon pieces
8oz onion chopped
6oz dried green split peas (Sainsbury’s) soaked overnight
2oz frozen peas
8oz potatoes diced
1½ pints water
1 stock cube
seasoning
Method
Fry bacon and onion for 5 mins
Add peas, water and stock cube and boil rapidly for 10 mins then simmer for a further 40 mins. Add potatoes and cook a further 20 mins. Remove some bacon pieces with slotted spoon and keep aside. Puree soup and adjust seasoning then return bacon to pan, add frozen peas and simmer a further 5 mins.
Serves 4

Ingredients
1 tablespoon of oil
1 onion
1 red pepper
1 teaspoon garlic puree
1 potato
2 tablespoons of flour
1 chicken stock cube
1 pint water
½ pint milk
2 oz broccoli
1 10½ can of sweet-corn
Method
Heat oil in large pan and sauté diced onion, garlic, red pepper and potato for 2-3 minutes over a low heat stirring frequently. Stir in flour and cook for 30 seconds. Add stock cube, water and milk simmer for 10 minutes stirring occasionally. Add broccoli and sweet-corn and cook a further 10 minutes.
Serves 4.

Ingredients
1 large onion
¼pt water
1oz margarine
3 teaspoons dried sage
3oz white breadcrumbs
Seasoning
Method
Peel and dice onion and cook in water until softened
Add margarine , sage and breadcrumbs and season to taste.
Use to stuff poultry or bake in a dish in a moderate oven until browned.

Ingredients
1tablespoon of oil
1 onion
2 medium parsnips
1 cooking apple
½ stock cube
1½pts water
2 tablespoons of parsley
½ teaspoon mixed herbs
½pt milk
seasoning
Method
Peel and dice onion, parsnip and apple.
Heat oil and fry onion gently until
softened then add parsnip and apple and sauté a further couple of minutes.
Add stock cube water and herbs and simmer about 30 mins until parsnip is soft.
Puree and add milk and season to taste.
Reheat and serve.
